| Meat Temperature Probe |

Cookshack’s
SmartSmokers smoke-cook to precisely the internal temperature that you specify and
then hold the product until you are ready for it.
Achieving
the right internal temperature is the key to producing succulently smoked cuts
such as pork shoulder, Boston butts, beef short ribs and even
chicken.
Thanks
to the optional meat probe, meats no longer have to be constantly watched on
their way to reaching perfection.
The meat temperature probe for non-rotisserie models links to the IQ4 controller
and allows the user to set the smoker to a desired internal meat temperature; when
that temperature is reached, the smoker automatically goes into the hold
cycle.

| Smokehood |
|
The Cookshack
Smokehood is a small hood incorporating a removable grease filter and an exhaust
fan. The Smokehood mounts directly on top of the smoker and removes smoke vented
during smoke-cooking.
The
Smokehood is constructed of heavy 18 gauge polished stainless steel. Smoke is
directed through a 4" diameter outlet, which can be vented directly outside or
under a commercial hood.
The
Smokehood is a good solution for small kitchens, or kitchens with inadequate
space in the line.
Note: The Cookshack Smokehood will not exhaust all of the smoke vented while
unloading the smoker. (A small amount of excess is to be expected).

| Removable
Cold Smoking Kit |
|
Cold-smoking
is the art of smoking food at such low temperatures that the food smokes, but
does not cook. Although Cookshack smokers are hot-smokers, this baffle allows
you to adapt your smoker for cold-smoking.
By
placing the insulated baffle in the lowest slot of your smoker's side racks,
heat is blocked. You can further lower the temperature by placing a pan of ice
on the baffle.
Cold-smoke
salmon for lox, duck breasts, steaks to finish on the grill, vegetables and
more. Baffle and firebox adapt your Cookshack smoker to an excellent
cold-smoking machine.
Place the baffle in the lowest slot of your smoker's side racks. Start pellets or
wood smouldering in the firebox and place it under the baffle. Place product in the
smoker and close the door. Product smokes but does not cook. The temperature can be
lowered even further by placing a pan of ice on the baffle.

| Rib
Racks |
Load the
slabs in the Rib Racks and slide them right into your smoker's side racks.
Slabs are easier and quicker to handle when loaded in Rib Racks. Transporting from
prep area to smoker is easy with the slabs stacked in the Rib Rack.
Pick up two sets of Rib Racks and have one ready to go in the smoker as one comes
out double your turnaround time!

Use these
grills when you smoke small or delicate items such as seafood or vegetables. They
work well for smoking jerky; just lay the jerky flat on the grill.
