and EU distributors of Cookshack's commercial SmartSmokers and Fast Eddy's by
Cookshack range of Grand Championship-winning hardwood pellet-burning smokers.
Ditto Green Mountain Grills pellet smoker grills and Frogmats. We also
represent Ergo Chef/Guy Fieri Knuckle Sandwich brands in the UK and
Eire.

Our Pit Boss
(Managing Director). Nick planned on opening an authentic barbecue restaurant in
the UK and spent four years travelling to the USA, meeting with the owners and pit
masters of over 30 leading BBQ joints in 11 States (as well as eating in
many more), and learning the art of commercial barbecue from luminaries such as
Mike Mills and Ed 'Fast Eddy' Maurin. He is a KCBS Certified Barbecue
Judge.
Having extensively researched the types of commercial smoker
best suited to the UK market, he was in the process of purchasing Cookshack
equipment from Jackie when he was offered an opportunity to buy into the company.
It was his Remington Moment! Nick now spends 100% of time working
with our clients and developing the company.

commercial clients alongside Nick, and is planning on holding a number of BBQ
Master Classes each year, starting in 2012, for backyard cooks who would like to

Cooking ‘low-and-slow’
over smoke to create mouth-wateringly tender and flavourful food. Typically, succulent meats or
seafood with a smoky. spicy crust (or “bark”), served with a tangy sauce; vegetables like you've
never tasted before. One of the world’s great cuisines, increasingly adapted by UK-based chefs and
backyard cooks to add their own unique twist to more familiar dishes. If you don't know barbecue
then you owe it to yourself to go out and find some! Better still, do it
yourself!!

An apparatus called a
smoker that draws hot, flavour-giving smoke past meat and other foods by
convection for very slow cooking. Smoke is generated by hardwood logs
or BBQ pellets made with flavour-woods such as hickory, apple, or mesquite The heat source
is separated from the cooking area by way of an offset firebox or
a heat diffuser. Some barbecue smokers have cold-smoking options for smoking foodstuffs
such as cheeses, fish, tofu, garlic, salts…
